Ingredients
For the Chenna (Indian Cheese)
For the Sweetened Milk
- 1 ltr Milk full-fat milk is recommended for the best results.
- 1/2 cup Sugar adjust to your preferred sweetness level.
- 1 tsp Cardamom Powder finely ground for optimal flavor.
For the Rasabali
- 1 tbsp Semolina sooji
- 2 tsp Whole Wheat Flour atta, whole
- 1/4 cup Vegetable Oil for deep frying.
Instructions
Prepare the Chenna
- Warm 1 liter of milk in a saucepan. Once boiling, add vinegar and remove from heat immediately. Let it sit for 2 minutes until the chenna separates from the whey.
- Drain the chenna in a muslin cloth and hang it for about an hour to remove excess water. For a better taste, rinse the chenna in cold water once or twice before hanging to remove the vinegar smell.
Prepare the Sweetened Milk
- In a separate saucepan, boil 1 liter of milk with sugar until it reduces to about half its original quantity. Stir occasionally to prevent sticking.
- Add cardamom powder and mix well. Remove from heat and set aside.
Prepare the Rasabali
- Combine the drained chenna, semolina, and whole wheat flour in a bowl. Knead the mixture for 3-5 minutes until smooth and pliable.
- Roll the mixture into 20 small balls. Flatten each ball into a small, circular disc using your palm.
- Heat vegetable oil in a deep pan. Deep-fry the discs until they are golden brown and cooked through.
- Gently place the fried chenna discs into the prepared sweetened milk. Allow to cool completely before serving.
