Prepare the Rice

  • Wash and soak basmati rice in enough water for 30 minutes. Drain well.
  • Add 6 cups of water and 1 teaspoon of salt to the drained rice. Bring to a boil, stirring occasionally. Reduce heat and simmer for 10-12 minutes, or until the water is absorbed and the rice is cooked through. Drain immediately and set aside to cool for 15-20 minutes.

Stir-fry the Vegetables

  • Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium heat. Add the white parts of the spring onions and stir-fry for 1 minute. Add the ginger-garlic paste and saute for another minute until fragrant.
  • Add the carrots, cabbage, bell peppers, and french beans. Stir-fry over high heat for 2-3 minutes, until the vegetables are crisp-tender. Do not overcook.

Combine and Season

  • Add the soy sauce, rice vinegar, green chili sauce, and tomato ketchup. Stir well and cook for 1 minute to combine the flavors.
  • Add the cooked basmati rice and gently toss to combine everything. Season with salt and pepper to taste. Remove from heat.

Garnish and Serve

  • Garnish with the green parts of the spring onions and serve hot.
