Ingredients
Rice & Liquids
- 2 cup Basmati Rice
- 6 cup Water for cooking rice
- 1 tsp Salt for cooking rice, adjust to taste
Vegetables
- 1/2 cup Spring Onions finely chopped, separate white and green parts
- 1/2 cup Carrots finely chopped
- 1/2 cup Cabbage finely chopped
- 1/2 cup Bell Peppers capsicum, finely chopped
- 1/2 cup French Beans finely chopped
Seasonings & Sauces
- 2 tbsp Vegetable Oil
- 1 tsp Ginger-Garlic Paste
- 1/2 tsp Pepper or to taste, black
- 1 tbsp Soy Sauce
- 1 tbsp Rice Vinegar
- 1 tbsp Chili Sauce or to taste, green
- 1 tbsp Tomato Ketchup or tomato sauce
Instructions
Prepare the Rice
- Wash and soak basmati rice in enough water for 30 minutes. Drain well.
- Add 6 cups of water and 1 teaspoon of salt to the drained rice. Bring to a boil, stirring occasionally. Reduce heat and simmer for 10-12 minutes, or until the water is absorbed and the rice is cooked through. Drain immediately and set aside to cool for 15-20 minutes.
Stir-fry the Vegetables
- Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium heat. Add the white parts of the spring onions and stir-fry for 1 minute. Add the ginger-garlic paste and saute for another minute until fragrant.
- Add the carrots, cabbage, bell peppers, and french beans. Stir-fry over high heat for 2-3 minutes, until the vegetables are crisp-tender. Do not overcook.
Combine and Season
- Add the soy sauce, rice vinegar, green chili sauce, and tomato ketchup. Stir well and cook for 1 minute to combine the flavors.
- Add the cooked basmati rice and gently toss to combine everything. Season with salt and pepper to taste. Remove from heat.
Garnish and Serve
- Garnish with the green parts of the spring onions and serve hot.
