Ingredients
Main Ingredients
- 2 cup Puffed Rice
- 1 cup Water
- 5-6 Tbsp Jaggery powdered or grated

- 1/4 tsp Cardamom Powder
- 1/4 cup Coconut grated
- 1/4 cup Almonds crushed and dry roasted
- 1/4 cup Cashews crushed and dry roasted
Instructions
- In a saucepan or kadai, bring 1 cup of water to a rolling boil over medium-high heat.
- Reduce the heat to medium and add the jaggery. Stir continuously until the jaggery dissolves completely and forms a syrup.
- Add the puffed rice to the jaggery syrup. Gently fold the puffed rice into the syrup, ensuring it's evenly coated. This allows the puffed rice to absorb the sweetness without becoming soggy.
- Continue to cook for about 1 minute over low heat, stirring occasionally, until the puffed rice has absorbed most of the syrup.
- Transfer the pongal to a serving dish and let it cool slightly.
- While the pongal cools, dry roast the crushed almonds and cashews in a separate pan over medium heat until fragrant and lightly golden. This enhances their nutty flavor and adds a pleasant crunch.
- Garnish the puffed rice pongal with the roasted nuts, cardamom powder, and grated coconut (if using). Serve warm or at room temperature.
