  • In a saucepan or kadai, bring 1 cup of water to a rolling boil over medium-high heat.
    Boiling water in a silver kettle with condensation on the surface, hot and steamy for cooking or tea.
  • Reduce the heat to medium and add the jaggery. Stir continuously until the jaggery dissolves completely and forms a syrup.

  • Add the puffed rice to the jaggery syrup. Gently fold the puffed rice into the syrup, ensuring it's evenly coated. This allows the puffed rice to absorb the sweetness without becoming soggy.

  • Continue to cook for about 1 minute over low heat, stirring occasionally, until the puffed rice has absorbed most of the syrup.
  • Transfer the pongal to a serving dish and let it cool slightly.
