- 250 gm Onion
- 2 tbsp Ginger-Garlic Paste
- 1 tsp Cumin Seeds
- 1 tbsp Turmeric Powder haldi
- 1 tbsp Coriander Powder dhania
- 1 tbsp Chili Powder red
- 1 tsp Pepper Powder black
Protein & Vegetables
Grains & Liquids
- 500 gm Basmati Rice rinsed
- 10 tbsp Mustard Oil
- 2 cup Water
Instructions
Sauté Aromatics
- Heat mustard oil in a pressure cooker. Once smoking, add cumin seeds, then immediately add the chopped onions. Cook until onions are dark brown. Add ginger-garlic paste and cook for 1 minute.
Cook Chicken and Spices
- Add the chicken pieces and cook for 5-6 minutes. Stir in the chopped tomatoes and green chilies, and cook for another 5 minutes. Add turmeric powder, coriander powder, red chili powder, and black pepper powder. Cook for 10-12 minutes, stirring occasionally.
Layer Rice and Cook
- Layer the rinsed basmati rice evenly over the chicken mixture. Do not stir. Carefully pour 2 cups of water into the cooker. Secure the lid and cook on high pressure for 1 whistle. Turn off the heat and allow the pressure to release naturally.
Garnish and Serve
- Once the pressure is released, fluff the rice gently with a fork. Garnish with fresh cilantro and thinly sliced green chilies. Serve hot with mint yogurt (optional).
Recipe Notes
Expert Tips for the Best Chicken Biryani:
- For extra flavor, marinate the chicken in yogurt and spices for at least 30 minutes before cooking.
- Adjust the amount of red chili powder according to your spice preference.
- If you don't have a pressure cooker, you can adapt this recipe to a traditional pot on the stovetop; cooking times will be longer.
- To enhance the aroma, add a few cardamom pods or bay leaves along with the cumin seeds.
