Ingredients
Vegetables & Lentils
- 2 Potato peeled and cut into 1/4-inch julienne strips
- 1/2 cup Dal mixed, soaked in water for at least 30 minutes
- 1 cup Beans green, trimmed and cut into 1-inch pieces
- 1 Onion finely sliced, medium-sized
- 2-3 Chili adjust to your spice preference, green, slit lengthwise
- 1 Tomato finely chopped, medium-sized
Spices & Seasonings
- 1/2 tsp Cumin Seeds jeera
- 1/2 tsp Mustard Seeds rai
- 2 tsp Ginger-Garlic Paste
- 1/2 tsp Turmeric Powder haldi
- 1/2 tsp Chili Powder adjust to your spice preference
- 1/2 tsp Coriander Powder dhania
- 1 tsp Garam Masala
- 1 tsp Fenugreek Leaves kasuri methi
- 1.5 tsp Salt or to taste
Instructions
Prepare the Tempering
- Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds; sauté until they begin to crackle.
Sauté Aromatics
- Add ginger-garlic paste and sauté for 1 minute. Add sliced onions and green chilies; sauté until onions soften.
- Add chopped tomatoes and cook until they become mushy.
Add Spices & Potatoes
- Add turmeric powder, chili powder, coriander powder, garam masala, and salt. Sauté for 1 minute.
- Add potatoes, green beans, and soaked dal. Mix well.
Simmer & Cook
- Cover the pan and cook over low heat for 15-20 minutes, stirring every 3-4 minutes to prevent burning and ensure even cooking. Do not add water.
Finish & Garnish
- Stir in kasuri methi (dried fenugreek leaves). Garnish with fresh cilantro (optional) and serve hot.
