Ingredients
 

Vegetables & Lentils

  • 2 Potato peeled and cut into 1/4-inch julienne strips
  • 1/2 cup Dal mixed, soaked in water for at least 30 minutes
  • 1 cup Beans green, trimmed and cut into 1-inch pieces
  • 1 Onion finely sliced, medium-sized
  • 2-3 Chili adjust to your spice preference, green, slit lengthwise
  • 1 Tomato finely chopped, medium-sized

Spices & Seasonings

Other

  • 2 tbsp Oil vegetable or canola oil
  • 1 tbsp Coriander chopped, for garnish (optional)

Instructions
 

Prepare the Tempering

  • Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds; sauté until they begin to crackle.

Sauté Aromatics

  • Add ginger-garlic paste and sauté for 1 minute. Add sliced onions and green chilies; sauté until onions soften.
  • Add chopped tomatoes and cook until they become mushy.

Add Spices & Potatoes

  • Add turmeric powder, chili powder, coriander powder, garam masala, and salt. Sauté for 1 minute.
  • Add potatoes, green beans, and soaked dal. Mix well.

Simmer & Cook

  • Cover the pan and cook over low heat for 15-20 minutes, stirring every 3-4 minutes to prevent burning and ensure even cooking. Do not add water.

Finish & Garnish

  • Stir in kasuri methi (dried fenugreek leaves). Garnish with fresh cilantro (optional) and serve hot.
