For the Chana Dal

  • 1 cup Jaggery grated
  • 1/2 cup Water for dissolving jaggery

  • Dissolve grated jaggery in 1/2 cup of water by gently heating. Strain if needed and set aside.

Cook the Chana Dal

  • Pressure cook 100g chana dal with 1 cup of water for 3-4 whistles. Ensure the dal is cooked but not mushy.

Combine and Simmer

  • Add the jaggery syrup, ginger powder, and cardamom powder to the cooked chana dal. Bring to a boil, then simmer for 2-3 minutes.

Add Coconut Milk

  • Stir in the thick coconut milk. Heat gently until almost boiling, then remove from heat.

Fry the Garnish

  • Heat ghee in a separate pan. Sauté the shredded coconut, cashews, and raisins until golden brown.

Finish and Serve

  • Pour the fried garnish over the payasam and mix gently. Serve hot or chilled.
