Ingredients

- 1 cup Beaten Rice also known as chuda
- 4 tbsp Sugar
- 1 tsp Cardamom Powder freshly ground is best
- 1 tbsp Ghee clarified butter
- 1/4 cup Coconut freshly grated, shredded, unsweetened
For the Yogurt Layer:
- 1/2 cup Greek Yogurt or hung curd
- 2 tbsp Sugar
- 1 pinch Saffron Strands
- 1 tbsp Pistachios chopped
For the Topping:
- 1/4 cup Boondi small, crispy chickpea flour dumplings, or 1 motichoor laddoo (sweetened)
- 3 tbsp Berries fresh or dried, chopped, mixed
- 2 tbsp Orange chopped
- 1 tbsp Pistachios for garnish, chopped, toasted
Instructions
Prepare the Chuda Ghasa
- Combine beaten rice, 4 tbsp sugar, and cardamom powder in a food processor. Pulse until coarsely ground.
- Add ghee and shredded coconut. Pulse again until well combined, resembling breadcrumbs.
Prepare the Yogurt Layer
- In a separate bowl, whisk together Greek yogurt, 2 tbsp sugar, saffron strands, and chopped pistachios.
Assemble the Parfait
- Layer a portion of the chuda ghasa in small glasses or serving dishes.
