Ingredients
Soup Base
- 1 cup Buttermilk
- 1 cup Moringa Flowers
- 1 Tbsp Pearl Millet Flour
Spices and Flavorings
- 1 Tbsp Ghee ghee
- 1 Chili dried, red
- 1 tsp Cumin Powder roasted
- 1 tsp Turmeric Paste
- Salt to taste
Garnish
- 1 tsp Chili-Garlic Oil
- 1 tsp Onion fried
Instructions
- In a small bowl, whisk together the buttermilk and pearl millet flour until smooth. This creates a light batter that will thicken the soup.
- Heat the clarified butter in a pan over medium heat. Add the dried red chili and moringa flowers. Sauté for a few seconds until fragrant.
- Pour the buttermilk mixture into the pan. Stir well to combine. Adding the buttermilk mixture slowly helps prevent lumps.
- Add the salt, roasted cumin powder, and turmeric paste. Stir to incorporate the spices evenly.
- Reduce the heat to low, cover, and simmer for 5 minutes, or until the soup has slightly thickened and the flavors have melded. Simmering allows the flavors to deepen and the soup to thicken gently.
- Ladle the soup into bowls. Garnish with chili-garlic oil and crispy fried onions for added flavor and texture.
