Ingredients
Dry Ingredients
- 1 cup All-Purpose Flour also known as maida
- 1 cup Oat Flour
- 1/2 cup Ragi Flour
- 1 cup Whole Wheat Flour whole
- 3 tbsp Flaxseed Meal
- 2 tsp Sugar granulated sugar
- 1.5 tsp Salt
- 2 tbsp Milk Powder
Wet Ingredients
- 4 tbsp Butter softened, unsalted
- 1 cup Water
- 1 tbsp Active Yeast dry
- 4 tbsp Nutella heaped
- 1 tbsp Milk for egg wash, use 1 large egg beaten with 1 tbsp milk. for milk wash, use milk only.
- 1 tbsp Butter for brushing after baking.
- 1 tbsp Sesame Seeds optional, for topping
Instructions
Prepare the Yeast
- Mix active dry yeast and sugar in lukewarm water. Let stand for 10 minutes until foamy.
Combine Ingredients
- In a large bowl, combine all-purpose flour, oat flour, ragi flour, whole wheat flour, flaxseed meal, softened butter, salt, and milk powder. Add the proofed yeast mixture.
- Knead for 7-8 minutes until a smooth dough forms. Add a tiny amount of flour if too sticky.
First Rise
- Shape the dough into a ball, place in an oiled bowl, cover with plastic wrap, and let rise in a warm place for 1.5 hours, or until doubled in size.
Shape the Dough
- Punch down the dough to release air. Divide it into 3 equal portions. Roll each portion into a circle.
Layer and Fill
- Spread Nutella evenly on the first disc, avoiding the edges. Top with the second disc, seal the edges, and spread Nutella on top. Repeat with the third disc.
Cut and Twist
- Cut the stacked discs into 16 equal sections, leaving the center uncut. Twist each section alternately clockwise and counterclockwise. Pinch the edges together to form a star shape.
Second Rise and Bake
- Place the star bread on a parchment-lined baking sheet. Cover loosely with plastic wrap and let rise for 15 minutes.
- Preheat oven to 350°F (180°C). Brush the bread with milk or egg wash and sprinkle with sesame seeds (optional).
- Bake for 40 minutes, or until golden brown. Brush with melted butter immediately after removing from the oven.
