Ingredients
For the Oats Dough
- 2 cup Rolled Oats
- 1 cup Wheat Flour whole
- 1/2 cup Water or as needed to form a soft dough
- 1.5 tsp Salt
- 1/2 tsp Baking Soda
For the Chana Masala Stuffing
- 1 cup Chickpea can be store-bought or home-roasted, chana, roasted
- 2 tbsp Ginger grated
- 2 tbsp Garlic crushed
- 1 tsp Cumin zeera
- 3-4 Chili Pepper finely chopped, green
- 1/4 cup Coriander chopped, dhania
- 2 tbsp Mango Pickle or other spice blend; adjust to taste
- 1.5 tsp Salt adjust to taste
- Pinch Asafoetida hing, optional
- 1/2 cup Clarified Butter for final browning, optional
- 1 tbsp Oil for sautéing the stuffing
Instructions
Prepare the Chana Masala Stuffing
- Sauté cumin seeds in oil until fragrant. Add ginger, garlic, and green chilies; sauté for a minute. Stir in roasted chickpeas, mango pickle, asafoetida (if using), salt, and coriander. Cook until heated through and flavors blend.
Prepare the Oats Dough
- Combine rolled oats, whole wheat flour, baking soda, and salt in a bowl. Gradually add water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes.
Assemble and Cook the Baati
- Roll the dough into small balls. Flatten each ball into a small disc. Place a spoonful of the chana masala stuffing in the center. Pinch the edges together to seal, forming a ball again.
Bake or Microwave the Baati
