Instructions

Prepare the Dry Ingredients

  • Sift together the all-purpose flour, cocoa powder, powdered sugar, and baking powder. Set aside.

Prepare the Wet Ingredients

  • Peel and chop the apple into small pieces. Mash the ripe banana. In a separate bowl, combine the mashed banana, chopped apple, and milk. Blend until smooth.

Combine Wet and Dry Ingredients

  • In a large bowl, whisk together the eggs, oil, and the apple-banana-milk mixture. Add the vanilla extract. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Do not overmix.

Add Mix-ins

  • Gently fold in the dried fruits and flax seeds.

Preheat Oven & Prepare Pan

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

Bake the Cake

  • Pour the batter into the prepared cake pan. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve

  • Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely. Once cooled, slice and serve.

Recipe Notes

Expert Tips

  • For a richer cocoa flavor, use dark cocoa powder.
  • If you don't have flax seeds, you can substitute with 2 tablespoons of chia seeds.
  • To make the cake even moister, add 1/4 cup of yogurt or sour cream to the wet ingredients.
  • Let the cake cool completely before frosting or glazing to prevent it from becoming soggy.
