Ingredients

- 1 cup Butter Cookies finely crushed; i used powdered butter cookies.
- 1/4 cup Butter melted, unsalted
For the Walnut Topping
- 1 cup Packed Sugar brown, light
- 1/4 cup Heavy Whipping Cream
- 2 tbsp Butter melted, unsalted
- 1 tsp Vanilla Extract pure vanilla extract is preferred, but imitation can be used.
- 1/2 cup Walnuts chopped
- 1.5 oz Chocolate optional; use chocolate morsels or shavings.
- 12 Paper Liners for muffin tin
Instructions
Preheat Oven and Prep Ingredients
- Preheat your oven to 350°F (175°C). Finely crush the butter cookies using a food processor or by placing them in a zip-top bag and crushing with a rolling pin.
Make the Crust
- In a medium bowl, combine the crushed cookies and melted butter. Mix well until a crumbly dough forms.
Prepare the Walnut Topping
- In a small saucepan over medium heat, combine the brown sugar, heavy whipping cream, and melted butter. Stir constantly to prevent burning. Bring to a gentle boil, then remove from heat.
Stir in Flavorings
- Stir in the vanilla extract and chopped walnuts. Mix until well combined.
Assemble and Bake
- Line a muffin tin with paper liners. Divide the cookie crumb mixture evenly among the liners, pressing it down firmly to form a base.
Add Topping and Bake
- Spoon the walnut topping evenly over the cookie crusts. Bake for 10-12 minutes, or until the topping is bubbly and slightly set. The baking time may vary depending on your oven.
Finish and Cool
- Remove from the oven and immediately sprinkle with chocolate morsels or shavings, if desired. Let cool completely in the muffin tin before serving. For firmer bites, refrigerate for at least 30 minutes before serving.
