Ingredients
Chana Dal & Liquids
- 150 gm Split Chickpea or substitute with urad dal (split black lentils) or a mix of both., split chickpeas
- 4 cups Water
Aromatics & Spices
- 1 tbsp Ginger finely chopped
- 6 clove Garlic crushed
- 2 Chili green
- 2 medium Onion roughly chopped
- 1 tbsp Ghee or substitute with vegetable oil
- 1 tsp Cumin Seeds
- 1 tsp Chili Powder red
- 1/2 tsp Turmeric Powder haldi
- 1 pinch Sugar
- 1 tsp Coriander Powder dhania
- 1/2 tsp Garam Masala
- 1.5 tsp Salt or to taste
- 2 tsp Mango Powder amchur, for a tangy flavor, dry
Instructions
Prepare the Dal
- Wash the chana dal and soak in water for 30 minutes. Pressure cook the dal with 4 cups of water and salt for 4-5 whistles.
Sauté Aromatics and Spices
- Heat the ghee in a wok or pan. Add cumin seeds, then add garlic, ginger, and green chilies. Sauté briefly. Add the chopped onions and cook until softened.
Build the Flavor
- Add red chili powder, turmeric powder, dry mango powder, coriander powder, sugar, garam masala, and salt. Stir well for a few minutes. Remove from heat.
Combine and Simmer
- Check the pressure cooked dal. If needed, add more water and pressure cook again until tender. Mash the dal partially with a ladle for a creamy texture. Add the sautéed onion mixture to the dal. Add more water if you prefer a thinner consistency.
