Instructions

Prepare the Dal

  • Wash the chana dal and soak in water for 30 minutes. Pressure cook the dal with 4 cups of water and salt for 4-5 whistles.

Sauté Aromatics and Spices

  • Heat the ghee in a wok or pan. Add cumin seeds, then add garlic, ginger, and green chilies. Sauté briefly. Add the chopped onions and cook until softened.

Build the Flavor

  • Add red chili powder, turmeric powder, dry mango powder, coriander powder, sugar, garam masala, and salt. Stir well for a few minutes. Remove from heat.

Combine and Simmer

  • Check the pressure cooked dal. If needed, add more water and pressure cook again until tender. Mash the dal partially with a ladle for a creamy texture. Add the sautéed onion mixture to the dal. Add more water if you prefer a thinner consistency.

Final Touches

  • Bring the dal to a boil, then simmer for 5 minutes to meld flavors. Stir in an extra teaspoon of ghee before serving. Enjoy!

Expert Tips for the Perfect Chana Dal

  • Soaking is Key: Soaking the dal helps reduce cooking time and improves its texture. Don't skip this step!
  • Spice it Up: Feel free to adjust the amount of red chili powder to suit your spice preference.
  • Creamy Consistency: For an extra creamy dal, use an immersion blender to puree a portion of the cooked dal before combining it with the sautéed mixture.
  • Garnish Generously: A final drizzle of ghee, a sprinkle of fresh cilantro, or a squeeze of lime juice elevates the dish to new heights.
