Jackfruit Preparation

  • 1 cup Jackfruit finely chopped (about 1 medium jackfruit), fresh, ripe jackfruit
  • 2 tbsp Jackfruit Jam chakka varatti; can substitute with 2 tablespoons of other fruit preserves and 1 teaspoon of jackfruit extract

  • 1/3 cup Butter melted; or substitute with 1/3 cup vegetable oil, unsalted
  • 1 cup Sugar powdered
  • 1/4 cup Milk or as needed to adjust batter consistency

Preheat & Prepare

  • Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.

Combine Wet Ingredients

  • In a large bowl, cream together the melted butter and powdered sugar until light and fluffy.

Mix in Jackfruit

  • Add the chopped jackfruit and chakka varatti to the wet ingredients. Mix well to combine.

Combine Dry Ingredients

  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

Combine Wet and Dry

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

Adjust Consistency

  • If the batter is too thick, add milk, one tablespoon at a time, until it reaches a smooth, pourable consistency.

  • Fill each muffin liner about 2/3 full. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
