Prepare the Orange Glaze

  • In a small saucepan, combine granulated sugar, water, and softened butter. Bring to a simmer over medium heat, stirring until the sugar dissolves. Carefully add the orange rings, ensuring they don't break. Simmer for about 1 minute. Remove from heat and let cool.

Arrange the Oranges

  • Lightly grease an 8-inch microwave-safe cake pan with oil or cooking spray. Arrange the cooled orange slices in the bottom of the pan, slightly overlapping them. Pour a small amount of the remaining glaze over the oranges.

Make the Cake Batter

  • In a large bowl, whisk together powdered sugar and oil until combined. Add in yogurt, orange zest, and orange food coloring (if using). Mix until smooth.

Combine Dry and Wet Ingredients

  • In a separate bowl, whisk together all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. Stir in the orange juice until a smooth batter forms.

Bake the Cake

  • Pour the cake batter evenly over the orange slices in the prepared pan. Tap the pan gently on the counter to remove any air bubbles. Microwave on high for 2-3 minutes, then reduce the power to 50% and continue to cook for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Cool and Invert

  • Let the cake cool in the pan for 10-15 minutes. Carefully run a thin knife or spatula around the edges of the pan to loosen the cake. Invert the cake onto a serving plate. The orange slices will now be on top.
