Ingredients
For the Cake
- 1 cup All-Purpose Flour also known as maida
- 1/2 cup Sugar powdered
- 2 tsp Baking Powder
- 1/4 cup Vegetable Oil or olive oil
- 1/2 cup Yogurt
- 2 tbsp Orange Juice freshly squeezed
- 1 tsp Orange Zest
- 1 pinch Orange Food Coloring optional
- 1/4 tsp Salt
For the Orange Glaze
- 1 Large Orange thinly sliced into rings
- 1/4 cup Sugar granulated
- 2 tbsp Water
- 1 tbsp Butter softened
- 8 inch Microwave-Safe Cake Pan
Instructions
Prepare the Orange Glaze
- In a small saucepan, combine granulated sugar, water, and softened butter. Bring to a simmer over medium heat, stirring until the sugar dissolves. Carefully add the orange rings, ensuring they don't break. Simmer for about 1 minute. Remove from heat and let cool.
Arrange the Oranges
- Lightly grease an 8-inch microwave-safe cake pan with oil or cooking spray. Arrange the cooled orange slices in the bottom of the pan, slightly overlapping them. Pour a small amount of the remaining glaze over the oranges.
Make the Cake Batter
- In a large bowl, whisk together powdered sugar and oil until combined. Add in yogurt, orange zest, and orange food coloring (if using). Mix until smooth.
Combine Dry and Wet Ingredients
- In a separate bowl, whisk together all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. Stir in the orange juice until a smooth batter forms.
