Mashed potato and egg bhurji is a simple and easy recipe idle for breakfast or brunch or can have as a side dish for lunch or dinner. It is prepared with boiled potatoes which are mashed then mixed with eggs and fried with simple spice and ingredients.

Ingredients
- 2 Potato (boil3d and mashed)
- 2 Eggs (beaten)
- 1 large Onion (chopped)
- 1 large Tomato (chopped)
- 2-3 Green Chillies (chopped)
- 1/2 tsp Cumin Seed
- 1-2 Spring Onion (green chopped)
- 2-3 tbsp Oil
- 1-2 tsp Salt (or as per taste)

Instructions
- In a mixing bowl add the mashed potatoes and beaten eggs and mix well.
- Heat oil in a pan. Add cumin seeds and let it splutter.
- Add the onion, green chillies, tomatoes and saute for 2-3 mins.
- Season with salt and add the potato egg mixture . Mix well and fry for about 7-8 mins .
- Add chopped spring onions ,give a quick stir and take off the heat.
