Ingredients
Pudding Base
- 1 cup Cottage Cheese cottage cheese
- 1/2 cup Mango Pulp
- 1/4 cup Heavy Cream
- 1/4 cup Sugar
- 1 tbsp Agar-Agar Powder
- 1/4 cup Water
Garnish
- 1/4 cup Mango cubed
- 2 tbsp Tutti Frutti
- 2-3 leaves Tulsi holy basil
- 2-3 Glazed Cherries
Instructions
- In a small bowl, dissolve the agar-agar powder in water. Set aside.
- In a blender, combine the paneer, mango pulp, heavy cream, and sugar. Blend until completely smooth.
- Pour the blended paneer mixture into a bowl. Add the dissolved agar-agar mixture and stir well to combine. Agar-agar acts as a vegetarian gelling agent.
- Cover the bowl and refrigerate for at least 3 hours, or until the pudding is set.
- Once set, garnish with cubed mango, tutti frutti, tulsi leaves, and glazed cherries. Serve chilled.
Recipe Notes
Good To Know
- For a smoother texture, blend the paneer with a splash of milk or coconut milk before combining it with the mango pulp; this will help eliminate any graininess and create a mousse-like consistency.
- Enhance the Indian flavor profile by adding a pinch of cardamom powder or a few strands of saffron dissolved in warm milk to the pudding mixture before chilling.
- If serving as a make-ahead breakfast, layer the pudding in individual jars and top with chopped pistachios, toasted coconut flakes, or a drizzle of honey for added crunch and visual appeal.
- For a vegan version, substitute paneer with firm silken tofu and use a plant-based cream powder; taste and adjust sweetness as needed since tofu is less sweet than paneer.
- If you want any fruit of choice, like pineapple or strawberry, you can add that too.
Expert Tips
- For a richer flavor, use Alphonso mangoes when they are in season.
- Adjust the sweetness of the pudding by adding more or less sugar depending on the sweetness of the mangoes.
- If you don't have cream powder, you can use heavy cream or coconut cream instead.
Storage Instructions
- Store leftover mango paneer pudding in an airtight container in the refrigerator for up to 3 days.
