Ingredients
- 8 Tortillas or indian chapati
- 1/4 cup Corn Kernels boiled and drained
- 1/4 cup Onion finely chopped
- 2 tbsp Spring Onions finely chopped, greens
- 1 tbsp Coriander finely chopped
- 1 cup Cheese grated, mozzarella
- 1 tbsp Oil or butter
- Salt as per taste
Instructions
Prepare the Filling
- Combine corn, onion, scallions, cilantro, cheese, salt, and pepper in a bowl. Mix well.
Cook the Quesadillas
- Heat butter or oil in a large skillet over medium heat.
- Place one tortilla in the skillet. Spread 1/4 of the corn and cheese mixture over half of the tortilla.
- Top with another tortilla.
- Cook for 2-3 minutes per side, or until golden brown and the cheese is melted and gooey.
Repeat and Serve
- Repeat with the remaining tortillas and filling to make 4 quesadillas.
- Serve immediately with your favorite toppings, such as salsa, guacamole, or sour cream.
