Ingredients
Parotha & Egg
Aromatics & Spices
- 2 Large Onions thinly sliced
- 2 Chillies finely chopped, green
- 1 tsp Garlic Paste
- 1/2 tsp Turmeric Powder haldi
- 1/2 tsp Chilli Powder red
- 1 tsp Garam Masala
- 1/2 tsp Pepper black, freshly ground, preferred
- 3/4 tsp Salt or to taste
Garnish & Oil
- 1/4 cup Coriander dhania, chopped
- 3 tbsp Coconut Oil
- 1 tbsp Water as needed, to prevent dryness
Instructions
Prepare the Parotha
- Shred or thinly slice the Malabar parothas into vertical strips.
Sauté Aromatics
- Heat coconut oil in a wok or large pan over medium heat. Add the green chilies and garlic paste; sauté for about 30 seconds until fragrant.
- Add the thinly sliced onions and sauté until lightly browned, about 5-7 minutes.
Build the Flavor
- Stir in the turmeric powder, red chili powder, garam masala, and salt. Sauté for another minute until the spices are fragrant and the mixture is well combined.
Add Eggs and Parotha
- Pour in the beaten eggs and mix well. Once the eggs are partially cooked, add the shredded paratha strips.
- Toss everything together to ensure even coating with the masala.
Final Steps
- If the mixture becomes too dry, add a tablespoon of water at a time until you reach a semi-dry consistency where the masala coats the parotha well.
- Reduce heat to low and gently cook for 5 minutes, allowing the flavors to meld together.
- Garnish with freshly chopped coriander leaves.
- Serve hot with yogurt or Chicken Salan.
Recipe Notes
Expert Tips for the Best Malabar Kothu Parotha
- For extra flavor, marinate the shredded parotha in a little yogurt and spices for 30 minutes before cooking.
- If using homemade Malabar Parathas, ensure they are slightly cooled before shredding to prevent sticking.
- Adjust the amount of chili powder to your preferred spice level.
- Don't overcook the Kothu Parotha; it should be moist and flavorful, not dry and crispy.
