Ingredients

- 3/4 tsp Mustard Seeds rai
- 3/4 tsp Split Chickpea
- 1 pinch Asafoetida hing
- 1 Chili red
- 1 leaf Curry Leaves
- 3/4 tsp Turmeric Powder haldi
- 1/2 tsp Chili Powder red
- 1.5 tsp Salt or to taste
Instructions
Preparation
- Wash and cube the potatoes and eggplant.
Tempering
- Heat oil in a kadai (wok) over medium heat. Add mustard seeds and allow to splutter.
- Add chana dal and asafoetida; sauté until golden.
- Add shallots, red chili, and curry leaves; sauté for 4 minutes.
Cooking the Vegetables
- Add the cubed potatoes and eggplant. Stir in turmeric powder, red chili powder, and salt.
- Sauté for 5 minutes. Add just enough water to barely cover the vegetables.
- Cover the kadai and cook for 10-15 minutes, or until the vegetables are tender and the water has evaporated.
- Check seasoning and adjust as needed.
Finishing Touches
- Stir in grated coconut and sauté for another 5 minutes.
- Remove from heat.
- Serve hot with rice or roti.
