Ingredients
 

Grains & Millet

  • 1 cup Millet barnyard millet, also known as jhangora. rinse thoroughly before use.

Dairy & Sweetener

  • 3 cup Milk
  • 1 cup Sugar adjust to your sweetness preference., or jaggery (gur)

Nuts & Spices

  • 1/2 cup Nuts cashews, mixed, pistachios. chopped., such as almonds
  • 1/4 cup Chironji adds a unique nutty flavor., optional
  • 1 tsp Rose Water adjust to taste., gulab jal
  • Pinch Cardamom Powder enhances flavor., optional

Instructions
 

Preparing the Jhangora

  • Rinse the barnyard millet thoroughly under cold water until the water runs clear.

Cooking the Millet

  • In a heavy-bottomed saucepan, bring the whole milk to a boil over medium heat. Add the rinsed jhangora and stir well to prevent sticking.
  • Reduce heat to low, and simmer gently, stirring frequently, until the jhangora is cooked and tender (about 20-25 minutes). The mixture will thicken.

Sweetening and Flavoring

  • Stir in the sugar (or jaggery) and continue to cook for another 5-7 minutes, until the sugar dissolves completely and the kheer reaches your desired consistency.
  • Remove from heat and stir in the rose water and cardamom powder (if using).

Garnishing and Serving

  • Stir in the chopped mixed nuts and chironji. Garnish with extra nuts if desired.
  • Serve the Jhangora Kheer warm or chilled.
