Ingredients

- 100 gm All-Purpose Flour maida
- 50 gm Butter
- 1 tsp Salt or to taste
- 1/2 tsp Sugar
- Water as needed to form dough
For the Methi Paneer Filling
- 1 bunch Fenugreek Leaves methi, fresh
- 250 gm Cottage Cheese cubed
- 2 tsp Ginger-Garlic Paste
- 2 medium Onions chopped
- 2 medium Tomatoes pureed
- 2 tsp Ghee
- 1 tsp Cumin Seeds
- 1/2 tsp Cumin Seeds
- 1 tsp Coriander Powder
- 1 tsp Chili Powder red
- 2 tsp Garam Masala
- 1 1/2 tsp Salt or to taste
- 2 tsp Sugar
- Oil for frying paneer
For the Topping (Optional)
- Cheese grated, such as mozzarella or cheddar
Instructions
- In a large bowl, combine the all-purpose flour and ice-cold butter. Use your fingertips or a pastry blender to cut the butter into the flour until the mixture resembles coarse crumbs. This creates pockets of butter that will result in a flaky crust.
- Gradually add ice water, a tablespoon at a time, mixing until the dough just comes together. Do not overmix, as this can make the crust tough. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 20 minutes. Chilling helps relax the gluten and ensures a tender crust.
- Preheat oven to 350°F (180°C).

- In a separate pan, heat oil over medium heat. Sauté the cubed paneer until lightly golden brown on all sides. This adds a nice texture and prevents the paneer from becoming watery in the filling.
- Add the sautéed paneer to the methi mixture and stir to combine.
- Fill the cooled tart shells with the Methi Paneer filling.
