Ingredients
 

For the Rabri (Creamy Milk Base)

  • 500 ml Milk
  • 120 gm Sweetened Milk condensed
  • 75 gm Sugar optional, adjust to taste. can be omitted if using sweetened condensed milk
  • 1/2 tsp Cardamom Powder elaichi powder; finely ground is best
  • 25 gm Pistachios unsalted slivers, roughly chopped; reserve some for garnish

For the Bread

  • 4 slices Bread thick-sliced bread works best. challah or brioche can also be used., brown

For the Sugar Syrup (Optional)

  • 1/2 cup Sugar or substitute with 1/2 cup of water, boiled and dissolved sugar
  • 1/4 cup Water for sugar syrup, if using sugar instead of pre-made syrup
  • 2 tbsp Oil for toasting or frying the bread

Instructions
 

Prepare the Rabri

  • Boil 500ml milk in a heavy-bottomed pan over low heat until it reduces by half, stirring frequently to prevent sticking. Add 120g sweetened condensed milk, 75g sugar (if using), and 1/2 tsp cardamom powder. Stir well to combine. Simmer until the mixture thickens into a creamy paste, approximately 15-20 minutes. Stir in 25g chopped pistachios, reserving some for garnish. Remove from heat and let it cool completely.

Prepare the Bread

  • Cut each slice of bread into two triangles. Lightly brush the triangles with 2 tbsp of oil. Toast them in a preheated oven at 180°C (350°F) for 10-12 minutes, or until golden brown. Alternatively, you can gently deep-fry the bread triangles in hot oil until golden brown.

Assemble the Shahi Tukda

  • If using sugar syrup, prepare it by dissolving 1/2 cup sugar in 1/4 cup water over low heat until dissolved. Dip the toasted bread triangles into the warm sugar syrup (or skip if using only the rabri) and let them soak for 15-20 minutes. Remove from syrup and gently arrange them on a serving plate.
  • Spoon the cooled rabri generously over the bread slices. Garnish with the reserved pistachios. Chill for at least 30 minutes before serving for optimal flavor and texture.
