- Hull and chop the strawberries into small pieces.
- In a large bowl, combine the chopped strawberries, cane sugar, and lemon juice. Gently mix to coat the strawberries evenly.
- Let the strawberry mixture macerate for at least 45 minutes at room temperature. This allows the sugar to draw out the juices from the strawberries and create a delicious syrup.
- Transfer the macerated strawberries and their juices to a deep pan or pot over medium heat. Add the cinnamon stick, if using.
- Add the water to the pan. Once the mixture comes to a boil, gently mash the strawberries to your desired consistency. Some chunks of fruit add a lovely texture to the preserve.
- Reduce the heat to low and continue to simmer, stirring occasionally, until the preserve thickens. This will take approximately 30-45 minutes. The mixture is ready when it coats the back of a spoon.
- To test for doneness, place a small plate in the freezer for 5 minutes. Place a few drops of the preserve on the chilled plate and return it to the freezer for 1 minute. If the preserve sets and doesn't run, it's ready.
- Remove the cinnamon stick, if used. Let the preserve cool to room temperature before transferring it to a sterilized airtight jar. Store in the refrigerator for several weeks or freeze for longer storage.
