Ingredients
For the Pastry Dough
- 2 cups All-Purpose Flour
- 2.5 tbsp Ghee
- 1.5 tsp Salt
- 1 cup Water add more as needed for dough consistency, approximately
For the Paneer Filling
- 1 cup Cottage Cheese indian cottage cheese, finely chopped
- 1 Bell Peppers green bell pepper, finely chopped
- 1/2 Bell Peppers finely chopped, red
- 1 tbsp Garlic minced
- 1.5 tbsp Chili Sauce green
- 1/2 tsp Pepper black, ground
- 1/4 tsp Salt
- 1 tbsp Butter
- 1 pinch Sugar
- 1 tbsp Oil for greasing the baking sheet
Instructions
Make the Pastry Dough
- Sift flour and salt into a large bowl. Cut in ghee (or butter) using a pastry blender or your fingertips until the mixture resembles coarse crumbs. Gradually add water, mixing until a soft, smooth dough forms. Cover and let rest for 15 minutes.
Prepare the Paneer Filling
- Heat butter in a pan over medium heat. Add minced garlic and sauté until fragrant (about 30 seconds). Add chopped bell peppers (both red and green), salt, and pepper. Sauté until softened, about 5 minutes.
- Stir in green chili sauce and cook for 2-3 minutes. Add chopped paneer and cook until heated through. Sprinkle with a pinch of sugar and stir to combine. Remove from heat and let cool.
Assemble the Puffs
- On a lightly floured surface, roll out the dough to about 1/8-inch thickness. Use a knife or pizza cutter to cut the dough into 2x2-inch squares.
- Place a teaspoon of the paneer filling in the center of each square. Wet the edges of one square with water, top with another square, and press the edges to seal. Crimp the edges with a fork to create a decorative seal.
- Place puffs on an oiled baking sheet.
Bake the Puffs
- Preheat the oven to 375°F (190°C). Bake for 15-20 minutes, or until golden brown and crispy. Let cool slightly on a wire rack before serving.
- Serve warm with your favorite dipping sauce.
