Ingredients
For the Choux Pastry
- 1/2 cup Water
- 50 grams Butter cut into small pieces, unsalted
- 1/2 cup All-Purpose Flour
- 2 Large Eggs
- 1 tsp Salt
For the Cheese Filling
- 1/2 cup Gruyere Cheese grated; other options include gouda or cheddar
- 2 tbsp Mozzarella Cheese grated; feta or parmesan are also great alternatives
- 1 tbsp Parsley chopped; or use other herbs like chives or thyme, fresh
- 1/4 tsp Pepper freshly ground, black
Instructions
Prepare the Choux Pastry
- Combine water, butter, and salt in a saucepan. Heat over medium heat until the butter melts and the mixture comes to a gentle boil.
- Remove from heat and add the flour all at once. Stir vigorously with a wooden spoon until a smooth dough forms and pulls away from the sides of the pan.
- Return the pan to low heat and cook, stirring constantly, for 2-3 minutes until the dough is slightly dry.
- Remove from heat and let the dough cool for about 5 minutes.
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Gradually add the eggs one at a time, mixing vigorously after each addition until fully incorporated. The dough should be smooth and glossy.
- Stir in the grated cheeses, parsley, and pepper.
Shape and Bake the Gougères
- Transfer the dough to a piping bag fitted with a large round tip (or use two spoons). Pipe 1-inch mounds onto the prepared baking sheet, leaving space between each.
- Alternatively, use two spoons to drop spoonfuls of dough onto the baking sheet. Gently flatten any peaks with a wet fingertip.
- Bake for 20-25 minutes, or until golden brown and puffed up. Reduce oven temperature to 300°F (150°C) for the last 5 minutes to ensure even browning and prevent burning.
- Let the gougères cool slightly on the baking sheet before serving. Enjoy!
Recipe Notes
Expert Tips for Perfect Gougères
- Use high-quality cheeses for the best flavor. A blend of Gruyère and Parmesan is a classic combination.
- Don't overmix the dough once the eggs are added; overmixing can result in tough gougères.
- Ensure the dough is completely cool before adding the eggs to prevent them from cooking.
- For extra crispy gougères, bake them on a baking stone or pizza stone.
