Ingredients
For the Paneer
- 3/4 liter Milk full-fat cow's milk or buffalo milk recommended for best results.
- 1 Lemon or 2-3 tablespoons of white vinegar or lemon juice
- 2 cup Water for rinsing the paneer and removing excess lemon flavor.
- 1 Muslin Cloth Or Clean Kitchen Towel
- 2-3 lb Weight heavy object such as books or a plate to press the paneer

- Heat 3/4 liter of full-fat milk in a large saucepan over medium heat. Stir occasionally to prevent scorching.
Curdling the Milk
- Bring the milk to a rolling boil. Once boiling, gradually add the juice of one lemon (or 2-3 tablespoons of white vinegar) while stirring constantly. The milk will begin to separate into curds and whey.
Separating the Paneer
- Continue to stir until the curds have completely separated from the whey (the liquid). If the curds don't fully separate, add a little more lemon juice, a teaspoon at a time, until they do.
Draining the Whey
- Remove the pan from the heat. Line a colander with a clean muslin cloth or kitchen towel. Carefully pour the curds and whey into the lined colander. Let it drain for a few minutes.
Rinsing the Paneer
- Gently gather the edges of the cloth and squeeze out as much whey as possible. Transfer the paneer to a bowl and rinse thoroughly with cold water, squeezing to remove excess liquid and lemon taste.
Pressing the Paneer
- Place the rinsed paneer back into the cloth. Gather the edges and twist to form a tight bundle. Place this bundle on a plate, then place a weight on top (e.g., heavy books or a plate with something heavy on it). Let it sit for 10-15 minutes to press out any remaining moisture.
Cutting and Serving
- Remove the weight and carefully unwrap the paneer. Cut into cubes or slices as desired and serve immediately or store in the refrigerator for up to 3 days.
