Instructions

Prepare the Basket Dough

  • Combine all-purpose flour, semolina, chickpea flour, chilled butter, baking powder, and salt in a large bowl. Gradually add chilled water, mixing until a soft, pliable dough forms. Cover and refrigerate for at least 15 minutes.

Shape the Baskets

  • Preheat oven to 350°F (175°C). Lightly grease muffin tins. Divide the dough into 12 equal portions. Roll each portion into a small ball and flatten slightly. Press each ball into a muffin cup, forming a small cup shape. Cut thin strips from remaining dough and create a handle by twisting two strips together; place on the basket.

Bake the Baskets

  • Bake for 15-20 minutes, or until golden brown and crispy. Carefully remove from muffin cups and let cool completely.

Prepare the Chaat Filling

  • In a bowl, combine boiled chickpeas, chaat masala, black pepper, ginger, black salt, and cilantro. Mix well.

Assemble the Basket Chaat

  • Fill each baked basket with the chickpea mixture. Top with sweet chutney, green chutney, and hung curd. Garnish with sev (optional) and any desired fresh herbs or vegetables.

Serve and Enjoy

  • Serve immediately and enjoy your delicious, homemade Basket Chaat!

Expert Tips for Perfect Basket Chaat

  • For extra crispy baskets, chill the dough for at least 30 minutes before shaping and baking.
  • If you don’t have muffin tins, you can use small ramekins or oven-safe bowls, but adjust baking time accordingly.
  • Feel free to customize your chaat filling with other vegetables, such as finely diced onions or tomatoes.
  • For a richer flavor, you can add a pinch of garam masala to the chaat filling.
