Ingredients
Bell Peppers
- 2 Bell Peppers medium size; any color
Filling Ingredients
- 1 pound Chicken ground, minced chicken
- 1/2 cup Onion finely chopped
- 2 tbsp Smashed Corn canned corn, drained and roughly smashed
- 1 tbsp Jalapeño Pepper finely minced; adjust to your spice preference
- 1 tbsp Garlic Paste
- 1 tsp Pepper black
- 1/2 tsp Salt or to taste
Topping & Garnish
- 1/2 cup Mozzarella Cheese shredded
- 1 tbsp Coriander chopped, fresh

- 1 tbsp Olive Oil
Instructions
Prepare the Bell Peppers
- Wash the bell peppers thoroughly. Cut a thin slice from the stem end of each pepper to remove the top. Carefully clean out the seeds and membranes.
Preheat Oven & Sauté Vegetables
- Preheat your oven to 400°F (200°C).
- Heat olive oil in a frying pan over medium heat. Add the minced garlic and sauté until lightly browned. Add the chopped onion and sauté until translucent.
Cook the Chicken Filling
- Add the ground chicken to the pan and cook, breaking it up with a spoon, until browned. Stir in the jalapeño pepper, smashed corn, salt, and black pepper. Continue cooking until the chicken is fully cooked through.
Stuff and Bake the Peppers
- Spoon the chicken mixture into the prepared bell peppers, filling them generously. Top each pepper with shredded mozzarella cheese and chopped cilantro.
- Lightly spray a baking tray with cooking spray. Place the stuffed peppers on the tray and bake uncovered for 30-35 minutes, or until the peppers are tender and the cheese is melted and bubbly.
Serve
- Serve the baked stuffed peppers immediately. Enjoy them on their own or with a side of garlic bread.
