Ingredients
For the Dhokla Batter
- 1 cup Semolina rava
- 1/2 cup Rolled Oats use quick-cooking oats or blend them into a powder for a smoother texture.
- 1/2 cup Yogurt curd
- 1 cup Spinach blanch and puree until smooth., fresh
- 2 tbsp Lemon Juice
- 1.5 tsp Salt adjust to taste
- 1 tbsp Sugar
- 1 tsp Eno Fruit Salt (or another baking powder)
- 1 tbsp Vegetable Oil for the batter and tempering
- 1 cup Water
For Tempering
- 1 tsp Mustard Seeds rai, black
- 10 leaves Curry Leaves
- 5 Chilies finely chopped, green
Instructions
Prepare the Spinach Puree
- Blanch the spinach leaves in boiling water for a minute, then immediately plunge into ice water to stop the cooking process. Drain well and puree until smooth. Set aside.
Prepare the Dhokla Batter
- In a large bowl, combine the semolina, oat powder (if using whole oats, blend until powdered), spinach puree, yogurt, lemon juice, salt, sugar, and 1 tablespoon of oil. Add 1 cup of water gradually, mixing until you achieve a smooth, slightly thick batter. Let the batter rest for at least 15 minutes.
Steam the Dhokla
- Lightly grease a steamer plate or baking dish. Just before steaming, gently fold in the Eno fruit salt into the batter. Pour the batter into the prepared dish. Steam for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
Prepare the Tempering
- While the Dhokla is steaming, heat 1 tablespoon of oil in a small pan. Add the mustard seeds and let them splutter. Then, add the curry leaves and green chilies. Sauté for a few seconds until fragrant.
Finish and Serve
- Carefully remove the steamed Dhokla from the steamer. Pour the tempering evenly over the Dhokla. Let it cool slightly, then cut into squares or diamonds. Serve warm with coconut chutney or your favorite chutney.
