Ingredients
For Pomegranate Pani (Red)
- 1 cup Pomegranate Seeds
- 1 cup Water
- 2 tsp Sugar
- 1/4 tsp Pepper black
- 1 tsp Chaat Masala
- Ice Cubes as needed
For Spinach Pani (Green)
- 1 cup Spinach Leaves packed
- 1/4 cup Mint Leaves packed
- 1/4 cup Tamarind Pulp or tamarind chutney
- 2 Chiles green
- 1 cup Water
- 1/2 tsp Salt or to taste
- 1 tsp Chaat Masala
- Ice Cubes as needed
Instructions
- To make the Pomegranate Pani, combine the pomegranate seeds, 1 cup of water, and sugar in a blender.
- Blend until a smooth paste forms. This helps release the vibrant color and flavor from the pomegranate seeds.
- Strain the mixture through a fine-mesh sieve into a bowl. This separates the flavorful juice from the seeds and pulp.
- Add 1/2 cup of water to the pomegranate juice. This adjusts the consistency and intensity of the pani.
- Stir in the black pepper and chaat masala. These spices add depth and complexity to the pani.
- Add ice cubes just before serving to keep the pani refreshingly cool.
- To make the Spinach Pani, combine spinach, mint leaves, green chiles, and 1 cup water in a blender.
- Blend until smooth. This creates a vibrant green base for the pani.
- Strain the spinach mixture through a fine-mesh sieve into a bowl. This removes any fibrous bits and ensures a smooth pani.
- Add 1/2 cup of water to the spinach juice to adjust the consistency.
- Add the chaat masala, salt, and tamarind pulp. These ingredients create a balanced flavor profile.
- Add ice cubes to chill the pani before serving.
- Serve both the Pomegranate and Spinach Pani with puris and your favorite filling, such as spiced potatoes or chickpeas.
Recipe Notes
Good To Know
- For a gluten-free version, look for puris made with millet or rice flour, which are now increasingly available at health food stores or Indian groceries.
- To further enhance the nutrient profile, replace the traditional potato stuffing with sprouted moong beans, chopped cucumber, and grated carrots for added protein and crunch.
- Chill the flavored pani with ice cubes made from diluted mint-coriander juice; this keeps the pani cold without diluting its flavors as it sits out during a gathering.
- For an eye-catching presentation, serve the pani in shot glasses alongside the puris, allowing guests to assemble each bite themselves and encouraging interaction.
Expert Tips
- Adjust the spice level of the pani to your preference by adding more or fewer green chilies.
- For a smoother pani, blend the ingredients until completely pureed. For a more textured pani, coarsely grind the ingredients.
- Prepare the puris and the pani separately in advance. Assemble the puris just before serving to prevent them from becoming soggy.
Storage Instructions
- Pani puri is best enjoyed immediately after preparation. The puris will become soggy if stored, and the pani may lose its vibrant flavor.
- If you need to store the pani, refrigerate it in an airtight container for up to 24 hours. The puris are not recommended for storage.
