Prepare the Yeast

  • Activate yeast by adding it to warm milk and letting it rest for 30 minutes.

Combine Dry Ingredients

  • In a large bowl, whisk together millet flour, all-purpose flour, baking powder, and salt.

Make the Dough

  • Add softened butter to the dry ingredients. Add the activated yeast mixture and mix well to form a soft dough. Knead gently for 5-7 minutes until smooth and elastic.

First Rest

  • Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for about 30 minutes, or until doubled in size.

Prepare the Oat Coating

  • In a separate bowl, combine rolled oats, mixed nuts and seeds, and raisins.

Shape and Coat the Bread

  • Punch down the risen dough and divide it in half. Roll each half into a loaf shape. Gently brush with milk and coat generously with the oat mixture. Place in greased loaf pans.

Final Proof and Bake

  • Let the loaves rise again for another 15-20 minutes. Brush the tops with melted butter. Bake in a preheated oven at 180°C (350°F) for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
