Dry Ingredients

Wet Ingredients

  • 1/2 cup Banana about 1 medium ripe banana, mashed
  • 1/2 cup Butter or ghee; melted, unsalted
  • 1/2 cup Sugar adjust to your sweetness preference, granulated
  • 1 tsp Vanilla Extract optional, enhances flavor
  • 1/4 cup Milk optional, for thinner batter
  • 1/2 cup Walnuts adjust quantity to your liking, chopped

Instructions
 

Prepare the Wet Ingredients

  • Cream together the melted butter and sugar until light and fluffy. Add the mashed banana and vanilla extract (if using), mixing well to combine.

Combine Dry Ingredients

  • In a separate bowl, whisk together the all-purpose flour, rolled oats, baking powder, baking soda, and salt.

Combine Wet and Dry Ingredients

  • Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Be careful not to overmix.

Add Walnuts and Milk (if needed)

  • Fold in the chopped walnuts. If the batter is too thick, add a little milk until it reaches a desired consistency.

Bake in Air Fryer

  • Lightly grease your muffin tins or use paper liners. Fill each muffin cup about 2/3 full. Bake in a preheated air fryer at 160°C (320°F) for 10-12 minutes, or until a toothpick inserted into the center comes out clean. Check at the 8-minute mark.

Cooling and Serving

  • Let the muffins cool in the air fryer for 5 minutes before transferring them to a wire rack to cool completely. Once cooled, enjoy!
