  • In a heavy-bottomed saucepan, combine the whole milk and condensed milk. Whisk until well combined.

  • Add the coffee powder to the milk mixture and whisk thoroughly to ensure it dissolves completely.
  • In a small bowl, whisk together the cornstarch with a tablespoon of the milk mixture to create a slurry. This prevents lumps from forming when added to the warm milk.
  • Place the saucepan over medium heat. Slowly pour in the cornstarch slurry while whisking constantly. Continue to whisk until the mixture comes to a gentle simmer and thickens enough to coat the back of a spoon.

  • Fill your popsicle molds about two-thirds full with the mocha base. Add a spoonful of the chocolate-nut-raisin mixture to each mold, gently pressing it down.
  • Tap the molds on the counter a few times to release any air bubbles. Insert the popsicle sticks and freeze for at least 7 hours, or preferably overnight, until solid.
