Instructions
Prepare the Oven and Pan
- Preheat your oven to 350°F (175°C). Lightly grease a madeleine pan with butter or non-stick cooking spray.
Combine Wet Ingredients
- In a medium bowl, whisk together the cornstarch and water until smooth. Stir in the vanilla extract, almond extract, and brown sugar until well combined.
Combine Dry Ingredients
- In a separate bowl, whisk together the almond meal, whole wheat flour, cocoa powder, and baking powder.
Combine Wet and Dry Ingredients
- Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Do not overmix.
Add Melted Butter
- Stir in the slightly cooled melted unsalted butter until a smooth batter forms.
Fill the Madeleine Pan
- Fill each madeleine mold about 2/3 full.
Bake the Madeleines
- Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean. Keep an eye on them as ovens vary.
Cool and Unmold

Recipe Notes
Expert Tips for Perfect Madeleines
- Don't overmix the batter! Overmixing will develop the gluten and result in tough madeleines.
- Let the melted butter cool slightly before adding it to the batter to prevent the batter from becoming too thin.
- For extra chocolate flavor, add 1-2 tablespoons of strong brewed coffee to the batter.
- If you don't have a madeleine pan, you can use a mini muffin tin; the shape won't be as distinct, but they'll still be delicious.
