Ingredients
 

For the Filling

  • 1 cup Rice brown, cooked
  • 1 Onion finely chopped
  • 2 Tomatoes finely chopped
  • 1 tsp Oregano dried
  • 1 cup Purple Cabbage finely chopped; can substitute with green cabbage, or other vegetables like zucchini or broccoli, white cabbage
  • 1/2 cup Cabbage finely chopped; optional, green
  • 1 cup Chickpeas cooked, drained; kabuli chana preferred
  • 1.5 tsp Salt or to taste
  • 1 tbsp Olive Oil
  • 3 tbsp Spring Onions finely chopped, green parts only

Prepare the Filling

  • Heat olive oil in a pan over medium heat. Add the chopped onion and sauté for 1 minute.
  • Add the chopped cabbages and sauté for a couple of minutes.
  • Add the chopped tomatoes and salt. Coarsely mash the chickpeas.
  • Add the mashed chickpeas, cooked brown rice, and oregano to the pan. Mix well.
  • Stir in the chopped spring onions. Remove from heat and set aside.

Prepare the Tortillas

  • If using dry tortillas, lightly dampen them with water or steam them briefly to soften them for easier wrapping. You can do this by wrapping them in foil and placing them over boiling water for 5 minutes, or microwaving for 1 minute.

Assemble the Burritos

  • Place a spoonful of the filling in the center of each tortilla.
  • Fold in the sides of the tortilla, then fold up the bottom and over the top to create a burrito shape.

Serve

  • Place the burritos in a casserole dish, cover with foil, and keep warm until ready to serve. Serve warm with your favorite salsa or dipping sauce.

Expert Tips

  • For extra flavor, add a pinch of cumin or chili powder to the filling.
  • If you don't have purple cabbage, feel free to use any other type of cabbage or even some sauteed zucchini or bell peppers.
  • To make the burritos ahead of time, prepare the filling and assemble the burritos. Store them in the refrigerator and reheat before serving. Reheating in a skillet will crisp them up nicely.
  • Experiment with different salsas or dips to complement the flavors of the burrito. A cilantro-lime crema or a spicy chipotle sauce would be delicious additions!
