Ingredients
Vegetables
- 250 gm Bottle Gourd lauki
- 1 medium Onion finely chopped
- 1/2 cup Coriander chopped
Spices & Aromatics
- 1 tsp Turmeric Powder
- 1/2 tsp Chili Powder red
- 1 tsp Cumin Seeds
- 1 tsp Coriander Powder
- 1 tsp Curry Powder
- 1 tsp Ginger Paste
- 2 tsp Tomato Paste
Fats & Oils
- 2 tbsp Vegetable Oil
- 1 tsp Ghee
Seasoning
- 1-2 tsp Salt to taste
Instructions
Preparation
- Peel and dice the bottle gourd into small cubes. Rinse the barley.
Cooking the Barley and Bottle Gourd
- Boil the barley and bottle gourd in water until the gourd is tender. Drain any excess water.
Frying the Badi
- Heat 1 tablespoon of oil in a pan. Fry the badi until golden brown and crispy. Set aside.
Making the Curry
- Heat the remaining oil in a pan. Add cumin seeds and sauté until fragrant. Add finely chopped onions and saute until translucent. Stir in ginger paste, turmeric powder, coriander powder, red chili powder, and tomato paste. Cook until the mixture is slightly browned.
Combining and Simmering
- Add the cooked bottle gourd and barley to the spice mixture. Stir in curry powder and salt. Cook for 2-3 minutes, allowing the flavors to meld.
Finishing Touches
- Crush the fried badi slightly and add them to the curry. Stir in the ghee. Cook for a few more seconds.
Garnish and Serve
- Garnish with fresh coriander leaves and serve hot.
