Ingredients
For the Aloo Gulab Jamun Dough
- 3 Potatoes boiled and mashed, medium-sized
- 1 1/4 cup All-Purpose Flour maida
- 1 cup Milk Powder
- 1/2 tsp Baking Soda
- 2 tbsp Ghee plus extra for greasing hands
For the Sugar Syrup
- 2 cup Sugar granulated
- 1 1/2 cup Water
- 1/2 cup Milk whole milk
- 2 tbsp Vegetable Oil for frying
Instructions
Prepare the Potatoes
- Boil 3 medium-sized potatoes until tender. Mash them thoroughly once cooled and peeled.
Make the Dough
- In a large bowl, combine the mashed potatoes, 1 1/4 cups of all-purpose flour, 1 cup milk powder, and 1/2 teaspoon baking soda. Knead into a soft, smooth dough, adding ghee as needed to prevent sticking. Let the dough rest for 10 minutes.
Prepare the Sugar Syrup
- In a saucepan, combine 2 cups of sugar, 1 1/2 cups of water, and bring to a boil. Add 1/2 cup of milk to clarify the syrup. Let it simmer for about 5 minutes, then strain through a fine-mesh sieve or cheesecloth to remove any impurities.
Shape and Fry the Gulab Jamun
- Grease your hands with ghee. Take small portions of the dough and roll them into smooth, round balls. Heat vegetable oil in a deep pan over medium heat. Gently fry the balls until golden brown, ensuring they cook evenly.
Soak and Serve
- Remove the fried Gulab Jamun and carefully immerse them in the warm sugar syrup. Allow them to soak overnight for best results. Serve chilled or at room temperature.
Recipe Notes
Expert Tips for Perfect Aloo Gulab Jamun
- For extra fluffy Gulab Jamun, whisk the milk powder with a little flour before adding it to the dough.
- Don't overcrowd the pan when frying. Fry in batches to ensure even browning and prevent sticking.
- Adjust the sugar syrup's consistency according to your preference. You can add more sugar for extra sweetness or more water for a thinner syrup.
- Soaking the Gulab Jamun overnight allows them to absorb the syrup fully, resulting in a richer flavor and texture.
