For the Makhana Crunch

For the Bowl

  • 1 cup Curd Plain, thick curd
  • 1 cup Seasonal Fruit Vrat-friendly fruit, chopped; use one fruit such as apple, banana, pear, papaya or pomegranate
  • 2 Dates Pitted and finely chopped
  • 1 pinch Sendha Namak Optional

Instructions
 

Preparing the Makhana Crunch

  • Heat a dry pan over low to medium heat. Add the makhana and dry-roast for 4–5 minutes, stirring frequently, until crisp.
  • Add the ghee and cardamom powder. Toss for 30–60 seconds until the makhana is lightly coated and fragrant. Remove from the heat and allow to cool slightly.

Assembling the Bowl

  • Whisk the curd until smooth. Divide it between two bowls and top with the chopped seasonal fruit and dates.
  • Roughly crush some of the roasted makhana and sprinkle over the bowls. Keep some makhana whole for extra crunch. Serve immediately.

Recipe Notes

Make-Ahead Tip

Roast the makhana up to 2–3 days ahead and store it in an airtight container at room temperature. Add the makhana only when serving so it stays crisp.

Office Tiffin Tip

Pack the curd and fruit in a leak-proof container and the roasted makhana separately. Add the makhana just before eating.

Quick Swap

Use any seasonal fruit permitted during your vrat, such as apple, banana, pear, papaya or pomegranate.
