Ingredients
Dry Ingredients
- 2 cup Whole Wheat Flour whole
- 1/4 cup Bajra Flour
- 1/2 tsp Salt
- 1/4 tsp Turmeric Powder
- 1 tsp Chili Powder red
- 1/2 tsp Carom Seeds ajwain
- 2 tsp Sesame Seeds
Wet Ingredients
- 1 cup Fenugreek Leaves methi, chopped, fresh
- 2 tbsp Yogurt curd
- 1 tsp Chili-Garlic Paste or ginger-garlic paste
- 1 tbsp Oil plus extra for kneading and cooking
Instructions
- Thoroughly rinse 1 cup of fresh fenugreek (methi) leaves under cold water. Drain well and chop finely.
- In a large bowl, combine the whole wheat flour, bajra flour, salt, turmeric powder, red chili powder, carom seeds, and sesame seeds.
- Add the chopped fenugreek leaves, yogurt, chili-garlic paste, and 1 tablespoon of oil to the dry ingredients.
- Gradually add water while mixing to form a soft, pliable dough. Knead for 5-7 minutes until smooth and elastic.
- Add 1/2 teaspoon of oil to the dough and knead again. This helps to keep the dough moist and improves the texture of the thepla.
- Cover the dough with a damp cloth or plastic wrap and let it rest for 10-15 minutes. This allows the gluten to relax, resulting in softer theplas.
- Divide the dough into equal-sized portions. Roll each portion into a thin disc on a lightly floured surface.
