  • 2 tbsp Yogurt curd
  • 2 tbsp Fenugreek Leaves finely chopped, fresh
  • 1/2 - 3/4 cup Water as needed for dough consistency

Instructions
 

Make the Dough

  • Combine whole wheat flour, turmeric powder, chili powder, salt, oil, yogurt, and chopped fenugreek leaves in a large bowl.
  • Gradually add water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth and elastic.
  • Add a tablespoon of oil to the dough, knead briefly, cover with a damp cloth, and let rest for 10-15 minutes.

Shape and Cook the Theplas

  • Divide the dough into 14 equal portions.
  • Roll each portion into a 5-inch diameter circle using a little dry flour to prevent sticking.
  • Heat a non-stick griddle or tava over medium heat.
  • Cook each thepla for 1-2 minutes per side, or until lightly golden brown and cooked through. Use a little oil to prevent sticking.

Serve

  • Serve the Methi Theplas hot with your favorite chutney or pickle.
