Ingredients
Tortillas
- 2 Wheat Tortillas whole
Filling
- 150 gm Chicken Breasts skinless
- 1 Onion medium, thinly sliced
- 4 clove Garlic crushed
- 1 Bell Peppers de-seeded and sliced into strips, green, medium
- 1 Bell Peppers de-seeded and sliced into strips, medium, red
- 1 Bell Peppers de-seeded and sliced into strips, medium, yellow
- 2 Tbsp Corn boiled, sweet
- 2 Tbsp Olives black, sliced
- 1/2 cup Monterey Jack Cheese grated
Seasoning
- 1/4 tsp Garlic Powder
- 1-2 tsp Salt or to taste
- 1/2 tsp Pepper black
- 1/2 Tbsp Cajun Seasoning
Instructions
- Boil the chicken breasts until cooked through. Shred the chicken and set aside.
Make the Filling
- Heat the olive oil in a large non-stick skillet over medium heat. Add the crushed garlic and sauté for about 1 minute until fragrant.
- Add the sliced onions to the skillet and sauté for another minute until softened.
- Add the bell peppers to the skillet and cook until slightly softened and fragrant.
- Add the shredded chicken and corn to the skillet. Toss to combine.
- Season the mixture with garlic powder, salt, black pepper, and Cajun seasoning. Mix well.
- Remove the skillet from the heat and set the filling aside.
Assemble the Quesadillas
- Melt butter on a griddle or large skillet over medium heat. Place a tortilla on the griddle.
- Sprinkle half of the tortilla with grated cheese. Top with the chicken and bell pepper filling and black olives.
- Fold the tortilla in half to create a half-moon shape. Brush the outside of the tortilla with butter.
- Flip the quesadilla and cook the other side, brushing with butter and pressing gently to melt the cheese and seal the quesadilla.
- Cook for about 1-2 minutes per side, or until golden brown and the cheese is melted and gooey.
- Remove the quesadilla from the griddle and let it cool slightly before cutting into wedges. Serve with salsa.
