Ingredients
For the Paneer Tikka Marinade
- 250 gm Cottage Cheese
- 1 cup Yogurt
- 1/2 tsp Chili Powder red
- 1/4 tsp Turmeric Powder
- 1/2 tsp Coriander ground
- 1/2 tsp Garam Masala
- 1 tsp Ginger grated
- 1 Chili finely chopped, green
- Salt to taste
For the Fried Rice
- 1 cup Basmati Rice cooked
- 1 Tbsp Oil
- 1/4 tsp Cumin Seeds
- 2 clove Cloves
- 2 Cardamom Pods green
- 1/2 stick Cinnamon Stick
- 1 Bay Leaf
- Salt to taste
- Oil as needed, for greasing
Instructions
- Cut the paneer into 1-inch cubes. Wash the basmati rice and soak it in water for 30 minutes. This helps the rice cook evenly and achieve a fluffy texture.
- In a mixing bowl, whisk the yogurt until smooth. Add the red chili powder, turmeric powder, ground coriander, garam masala, grated ginger, finely chopped green chili, and salt. Mix well to combine. Add the paneer cubes to the marinade, ensuring they are evenly coated. Cover and let it marinate for 30-45 minutes. This allows the paneer to absorb the flavors of the spices.
- Heat 1 tablespoon of oil in a deep pan or wok. Add the cumin seeds, cloves, bay leaf, and cinnamon stick. Sauté over medium heat for a few seconds until fragrant. This creates a flavorful base for the rice.
- Add the soaked rice to the pan and sauté for 2 minutes, stirring constantly. This helps to toast the rice grains and enhance their flavor. Add 3 cups of water and salt. Cover and cook over low heat for 10-15 minutes, or until the rice is cooked through and the water is absorbed. Stir occasionally to prevent sticking.
- Spread the cooked rice on a plate and let it cool completely. This prevents the rice from becoming mushy when mixed with the other ingredients.
- Heat a grill pan and lightly grease it with oil. Grill the marinated paneer cubes over medium heat, turning occasionally, until they are evenly browned on all sides. This adds a smoky char and enhances the flavor of the paneer.
- Heat ½ teaspoon of oil in a frying pan. Add the leftover marinade and cook, stirring continuously, until it thickens slightly. Add the cooled rice and gently mix, being careful not to break the rice grains. Add the grilled paneer cubes and toss to combine. Cook for 1-2 minutes, tossing occasionally, to heat through. This brings all the flavors together.
- Serve the Paneer Tikka Fried Rice hot. Garnish with fresh cilantro, if desired.
Recipe Notes
Good To Know
- Instead of plain yogurt, hung curd can be used. In that case, slightly increase the amount of hung curd to ensure enough marination is left to enjoy with the cooked rice.
- For an extra smoky flavor, briefly toss the cooked rice and paneer tikka in a very hot pan or wok. Alternatively, place a small piece of hot charcoal in a bowl in the pan, drizzle with ghee, and cover for 2 minutes to infuse the dish with smokiness.
- For a vegan version, substitute paneer with firm tofu and marinate it with similar tikka spices before grilling or pan-frying.
- Use day-old, refrigerated rice to maintain a distinct texture and prevent it from becoming mushy.
- Garnish with fresh coriander leaves and a squeeze of lime juice just before serving.
Expert Tips
- Marinating the paneer (or tofu) for a longer period, preferably overnight, allows the flavors to deepen and penetrate more effectively.
- Adjust the spice level of the marinade to your preference by adding more or less chili powder.
- If using wooden skewers for grilling, soak them in water for at least 30 minutes prior to prevent them from burning.
Storage Instructions
- Store leftover paneer tikka fried rice in an airtight container in the refrigerator for up to 3 days.
- Reheat gently in a pan over medium heat or in the microwave, adding a splash of water or oil to prevent drying out.
