Ingredients
For the Almond Pâté Sablée Crust
- 1/2 cup Butter unsalted
- 1/4 cup Sugar granulated
- 1/2 Large Egg
- 1 cup All-Purpose Flour
- 1/2 cup Almond Flour
- 1/4 tsp Salt
- 1/2 tsp Almond Extract
For the Cream Cheese Filling
- 1/2 cup Cream Cheese softened
- 1 cup Heavy Whipping Cream cold
- 1/2 tsp Vanilla Extract
For the Garnish
- Strawberries fresh, halved or sliced
- Mint Leaves fresh
- Edible Flowers optional
Instructions
- In a mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy.
- Beat in the egg until well combined.
- In a separate bowl, whisk together the all-purpose flour, almond flour, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Stir in the almond extract.
- Divide the dough in half, flatten each half into a disc, wrap in plastic wrap, and chill for at least 1 hour.
- Preheat oven to 350°F (175°C).
- On a lightly floured surface, roll out each disc of dough into a circle. Transfer to a baking sheet lined with parchment paper.
- Using a smaller lid or cookie cutter, cut out a circle from the center of each dough round to create a donut shape. This creates the classic tart ring.
- Bake for 10-15 minutes, or until lightly golden.
- Let the crusts cool completely before filling.
- In a mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
- Add the vanilla extract and beat until combined.
- In a separate bowl, beat the cold heavy whipping cream with an electric mixer until stiff peaks form. Beating the cream while cold helps it whip up faster and hold its shape better.
- Gently fold the whipped cream into the cream cheese mixture until just combined.
- Transfer the cream cheese filling to a piping bag fitted with your desired tip.
- Place one baked tart ring on a serving plate. Pipe the cream cheese filling onto the ring.
- Carefully place the second tart ring on top of the filling.
- Pipe more cream cheese filling on top of the second ring.
- Garnish with fresh strawberries, mint leaves, and edible flowers (if desired).
Recipe Notes
Good To Know
- For an extra-crisp tart shell, brush the baked pâte sablée crust with a thin layer of melted white chocolate before adding the cream filling. This creates a barrier that prevents sogginess and adds a subtle sweetness.
- If you’d like to intensify the almond flavor, scatter a handful of toasted sliced almonds over the cream cheese layer before topping with fruit for both a flavor and textural boost.
- For a gluten-free version, substitute the all-purpose flour in the tart base with a high-quality gluten-free flour blend. Almond flour naturally enhances the tenderness, so texture will remain appealing.
- To achieve picture-perfect slices, chill the tart thoroughly for at least 2 hours before serving and use a sharp, thin-bladed knife wiped clean between each cut.
Expert Tips
- Blind-baking the crust ensures it's fully cooked and prevents a soggy bottom. Use pie weights or dried beans to keep the crust from puffing up during baking.
- Don't overmix the cream cheese filling, as this can incorporate too much air and lead to cracks in the baked tart.
- Arrange the fruit topping decoratively for a visually appealing presentation. Consider using a variety of colors and textures for added interest.
Storage Instructions
- Store leftover tart in an airtight container in the refrigerator for up to 3 days.
