Ingredients
Dough
- 300 gm All-Purpose Flour
- 50 gm Butter melted, unsalted
- 50 gm Sugar granulated
- 6 gm Active Yeast dry
- 1/2 tsp Salt
- 140 ml Water 105-115°f (40-46°c), warm
Butter Layer
- 150 gm Butter softened, unsalted
Almond Filling
- 50 gm Butter softened, unsalted
- 50 gm Caster Sugar
- 50 gm Almonds ground
- 1/2 tsp Almond Extract
Topping
- 100 gm Raspberry Jam
Instructions
- In a large bowl, combine the all-purpose flour, melted butter, granulated sugar, active dry yeast, and salt.
- Gradually add the warm water, mixing until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface and knead for 10-15 minutes, or until smooth and elastic. This develops the gluten for a light and airy texture.
- Place the dough in a lightly oiled bowl, cover with plastic wrap, and let rise in a warm place for 1-2 hours, or until doubled in size.
- Punch down the risen dough to release the air. Divide it into 6 equal portions and shape each portion into a smooth ball.
- On a lightly floured surface, roll out one dough ball into a thin rectangle, about 1/4 inch thick.
- Spread a thin layer of softened butter evenly over the rolled-out dough.
- Tightly roll the dough into a log, starting from one of the long edges.
- Cut the log in half lengthwise using a sharp knife.
- Twist each half into a spiral, with the cut sides facing outwards, and tuck the ends underneath to form a cruffin shape.
- Place the cruffins in a buttered muffin tin, cover loosely with plastic wrap, and let proof for another 1-2 hours, or until doubled in size.
- Preheat oven to 400°F (200°C). Bake the cruffins for 18-20 minutes, or until golden brown.
- While the cruffins are baking, prepare the almond filling. Beat together the softened butter, caster sugar, ground almonds, and almond extract until light and fluffy.
- Once the cruffins are baked, let them cool completely on a wire rack.
- Using a piping bag or a small spoon, fill the center of each cruffin with the almond filling. Top with a dollop of raspberry jam.
