Instructions

  • In a large bowl, combine the all-purpose flour, melted butter, granulated sugar, active dry yeast, and salt.
  • Gradually add the warm water, mixing until a shaggy dough forms.
  • Turn the dough out onto a lightly floured surface and knead for 10-15 minutes, or until smooth and elastic. This develops the gluten for a light and airy texture.
  • Place the dough in a lightly oiled bowl, cover with plastic wrap, and let rise in a warm place for 1-2 hours, or until doubled in size.
  • Punch down the risen dough to release the air. Divide it into 6 equal portions and shape each portion into a smooth ball.
  • On a lightly floured surface, roll out one dough ball into a thin rectangle, about 1/4 inch thick.

  • Tightly roll the dough into a log, starting from one of the long edges.
  • Cut the log in half lengthwise using a sharp knife.
  • Twist each half into a spiral, with the cut sides facing outwards, and tuck the ends underneath to form a cruffin shape.
  • Place the cruffins in a buttered muffin tin, cover loosely with plastic wrap, and let proof for another 1-2 hours, or until doubled in size.
  • Preheat oven to 400°F (200°C). Bake the cruffins for 18-20 minutes, or until golden brown.
  • While the cruffins are baking, prepare the almond filling. Beat together the softened butter, caster sugar, ground almonds, and almond extract until light and fluffy.
  • Once the cruffins are baked, let them cool completely on a wire rack.
  • Using a piping bag or a small spoon, fill the center of each cruffin with the almond filling. Top with a dollop of raspberry jam.

Recipe Notes

Good To Know

  • For an extra-crisp exterior, bake the cruffins on the middle rack and rotate the muffin tin halfway through baking to ensure even browning and flakiness.
  • If you prefer a more intense almond flavor, toast the almond filling ingredients lightly before incorporating them into the dough; this enhances both aroma and depth of flavor.
  • To prevent the raspberry filling from leaking out, spread it in the center of the dough before rolling, leaving a clean border around the edges, and gently press the seam to seal before shaping into cruffins.

Expert Tips

  • Use high-quality butter with a high fat content for the best lamination and flavor.
  • Don't overfill the cruffins, as this can cause them to burst during baking.
  • For a beautiful presentation, dust the finished cruffins with powdered sugar or drizzle with a simple glaze.

Storage Instructions

  • Cruffins are best enjoyed fresh, but you can store them in an airtight container at room temperature for up to two days.
  • Reheat briefly in a 300°F (150°C) oven to restore their flaky texture.
