Ingredients

- 3 clove Cloves
- 2 whole Chillies dried, red
- 1 tsp Turmeric Powder
- 2 tsp Coriander Powder
- 2 tsp Chili Powder red
- 2 tsp Mango Powder amchur, dry

- 1 cup Basmati Rice soaked for at least 30 minutes
- 3 tbsp Oil vegetable or canola
- 1 ½ tsp Salt or to taste
- ½ tsp Sugar
- 2 tsp Lime Juice fresh
- Maggi Masala for garnish, optional, to taste
Instructions
- Heat the oil in a large pot or Dutch oven over medium heat. Add the cumin seeds, bay leaves, cloves, and dried red chilies. Sauté for a minute until fragrant.
- Add the sliced onions and sauté until translucent, about 5-7 minutes. Add the grated ginger and chopped garlic, and sauté for another minute until fragrant.
- Add the chopped tomatoes, green peas, green chilies, and carrots to the pot. Stir well to combine.
- Add the turmeric powder, coriander powder, red chili powder, dry mango powder, salt, and sugar. Stir well to coat the vegetables with the spices.
- Add the soaked rice and 2 cups of water to the pot. Stir gently to combine. Bring the mixture to a boil, then reduce the heat to low, cover the pot tightly, and simmer for 15-20 minutes, or until the rice is cooked through and the water is absorbed. Fluffing the rice with a fork halfway through helps ensure even cooking.
- Once the rice is cooked, stir in the fresh lime juice. This adds a bright, citrusy note that balances the spices.
- Garnish with fresh coriander leaves and a sprinkle of Maggi Masala, if desired. Serve hot with a side of yogurt, pickle, or chutney.
