Ingredients
 

Rice and Vegetables

  • 2 cup Basmati Rice
  • 1 Carrot cut into short strips or julienned, medium
  • 1/2 cup Peas fresh or frozen, green
  • 1/2 cup Beans green, trimmed and cut into short strips or julienned

Aromatics and Spices

Fats and Seasoning

  • 4 tbsp Ghee use half oil and half ghee for a healthier option, or all ghee for a richer flavor.
  • 1.5 tsp Salt or to taste
  • 2 tbsp Cream

Instructions
 

Prepare the Rice and Vegetables

  • Cook basmati rice according to package directions until tender. Spread on a plate to cool.
  • Blanch all the vegetables in boiling salted water for 4-5 minutes. Drain and set aside to cool.

Sauté Aromatics and Spices

  • Heat the ghee or oil in a pan over medium heat. Add the cumin seeds and let them crackle.
  • Add the sliced onions and sauté until translucent.
  • Add the blanched vegetables, salt, red chili powder, turmeric powder, cumin powder, mace, nutmeg, cardamom powder, and chopped mint. Stir well and sauté for 5-7 minutes.
  • Stir in the cream and mix well to coat the vegetables.

Combine and Finish

  • Gently fold in the cooked rice, ensuring all the rice is coated with the masala (spice mixture).
  • Sprinkle the chopped coriander leaves on top.
  • Cover the pan and cook over the lowest heat for 2 minutes. Remove from heat and let it rest for 5 minutes.
  • Serve hot with raita or pickle of your choice.
