Ingredients
For the Onion Paste
- 2 Onion medium, sliced and deep-fried until golden brown
Spices and Aromatics
- 250 gm Cottage Cheese indian cottage cheese
- 1 Bay Leaf tej patta
- 2 Cardamom green, lightly crushed
- 2 clove Cloves
- 1 stick Cinnamon
- 1.5 tbsp Coriander dhania
- 3/4 tbsp Pepper black
- 1 tsp Cumin roasted
- 1 tsp Garam Masala
Dairy and Herbs
Fats and Liquids
- 1.5 tbsp Clarified Butter clarified butter, or vegetable oil
- 1.5 cup Water
Instructions
Prepare the Onion and Spice Pastes
- Deep-fry the sliced onions in oil until golden brown. Allow to cool completely, then blend into a smooth paste.
- Blend the ginger, garlic, and green chilies into a separate smooth paste (3G paste).
Cook the Sauce
- Heat the ghee in a pan over medium heat. Add the bay leaf, cardamom, cinnamon, and cloves; sauté briefly until fragrant.
- Add the onion paste and sauté for 2-3 minutes until softened. Stir in the yogurt and mix well, ensuring no curdling occurs.
- Add the 3G paste and sauté for another 2 minutes, stirring constantly.
Incorporate Spices and Paneer
- Add the coriander powder, black pepper powder, cumin powder, salt, and garam masala. Mix thoroughly and cook for 1 minute, stirring to prevent burning.
- Cut the paneer into bite-sized triangles or your preferred shape.
- Add 1.5 cups of water to the sauce. Gently stir in the paneer pieces and garam masala.
- Add the cream and mix well.
Dum Cooking and Finishing
- Stir in the chopped mint and coriander leaves. Bring the mixture to a simmer.
- Cover the pan tightly with a lid, sealing the edges to create a “dum” effect. You can use foil paper under the lid for a better seal.
- Cook on low heat for 15 minutes, allowing the flavors to meld and the paneer to become tender.
- Open the lid and serve hot with naan, roti, or basmati rice.
