For the Dozza Sauce

  • 2.5 Tomato ripe tomatoes
  • 2.5 cloves Garlic
  • 1 inch Ginger
  • 2-3 Chili adjust to your spice preference, red, whole red chilies
  • 3 tsp Olive Oil
  • 1 tsp Sugar adjust to taste
  • 1/2 tsp Cumin jeera, seeds

For the Dozza

  • 1 cup Dosa Batter your favorite recipe or store-bought
  • 2 slices Cheese cheddar), mozzarella, your favorite melting cheese (e.g.

Instructions
 

Prepare the Dozza Sauce

  • Grind the tomatoes, garlic, ginger, chilies, cumin seeds, and sugar into a smooth paste. Heat the olive oil in a pan over medium heat. Add the paste and sauté until the raw smell disappears and the oil separates slightly. Set aside.

Cook the Dozza

  • Heat a lightly oiled griddle or dosa pan over medium heat. Spread a thin layer of dosa batter. When slightly firm, spread the prepared Dozza sauce evenly over the dosa.
