Instructions

Prepare the Urad Dal Pakodis

  • Soak 1 cup urad dal for 6-8 hours. Drain and blend into a smooth batter. Season with 1/2 tsp salt. Heat 4 tbsp oil in a pan. Drop small spoonfuls of the batter into the hot oil, frying until golden brown. Remove and set aside.

Prepare the Dal Gravy

  • Soak 1 cup urad dal for 6-8 hours, then drain. In a separate pan, heat 2 tbsp oil. Add cumin seeds and let them crackle. Add ginger-garlic paste and sauté until fragrant. Add onion paste and fry until golden brown. Stir in turmeric powder, red chili powder, and coriander powder. Cook for a minute. Add the chopped tomatoes and cook until the oil separates from the masala.

Combine and Simmer

  • In a bowl, combine the soaked urad dal with 1/4 cup water. Blend to a smooth consistency. Add this mixture to the masala. Stir well and bring to a boil. Reduce heat, cover, and simmer for 10-15 minutes, or until the dal is cooked through and tender.

Finish and Serve

  • Add the fried urad dal pakodis to the dal gravy. Stir gently and cook for another 5 minutes. Turn off the heat, garnish with fresh coriander leaves, and serve hot with rice or roti.

Recipe Notes

Expert Tips for the Best Urad Dal Karayal

  • For extra fluffy pakodis, whisk the urad dal batter vigorously before frying.
  • Adjust the amount of red chili powder according to your spice preference.
  • If the gravy is too thick, add a little more water. If it's too thin, simmer uncovered for a few more minutes to reduce the liquid.
  • Adding a squeeze of lemon juice at the end brightens the flavors and adds a refreshing tang.
